DINNERWARE
:
There
are many choices of materials used in making
dishes for todays food service market including
china glass & melamine or other plastic
ware.
CHINAWARE
Only
vitrified china is recommended for food
service table use. Vitrified china is made
of an excellent quality of clay. Thick china
is commonly used for lunch.It is clumsy
to handle and unattractive in appearance.
All
except cups have a roll under the outer
edge that gives effect of weight and also
lessens chipping on upper side of plate.This
type of china is mostly used in institutions
such as hospitals, halls, residence and
restaurants.
CARE
:
China ware will have a much longer life
if handled carefully and cleaned properly.It
is believed that most breaking is caused
by china hitting against china.
Careful
attention throughout scraping, washing,
stacking & storing contributes to length
of life of china ware. Generally, breakage
is more of fruit dishes, small plates and
saucers.
GLASS
DINNERWARE
A popular dinner ware made by the corning
glass company is a basic glass in which
the percentage of the sand used in its manufacturing
is replaced with aluminium powder.
The
resulting dinnerware is strong, thin, welltempered,
has a smooth surface & is highly resistant
to stains, heat scratching and breakage.
It
is available in a variety of sizes , shapes
and decorative designs on a white background.
The cost is less than that of some high
quality dinnerware.
CARE
:
Glass has a much longer life when handled
carefully and cleaned properly. Glass dinnerware
should be washed in salted or in a seperate
dishwashing machine.
If
it must be washed in the same machine used
for other dishes ,it should be seperated
and stacked into like kinch before washing
and to store clean cups and glasses in the
racs in which they are washed.
Rubber
plate scrappers not only decrease noise
but helps to reduce breakage of dishes.
Generally, breakage is highest on small
plates, saucers, fruit dishes, they are
stacked too high, handles are broken from
cups & edges of large heavy plates may
be chipped.
As a mean of reducing breakage, a frequent
inventory of stock should be made so that
workers become aware that a constant check
is being made.
