The
quick and easycooking method is Stir-frying.
In Stir-frying the vegetables are cooked
rapidly in less water so minimum vitamins
are lost/destroyed than normal cooking methods.
Dice, Shred or finely slice the vegetables
intoequal sized pieces. Its better to use
less oil, sometimes it is good to use water
instead. While stir-frying if the vegetable
dries sprinkle little water.Always keep
in mind that the pan should be very hot
before adding in the vegetables.
Always remember that the denser vegetables
that take a longer time to cook like carrots,
onions etc should go in first then lastly
the less dense vegetables like mushrooms
paneer etc.
Keep the vegetables tender and slightly
crisp don't over-cook them ,serve immediately
after cooking.
