Ingredients
:
2-3 tbsp besan
¼ tbsp ginger (Cut Fine)
1 tbsp green chillies (Cut Fine)
¼ tbsp mustard seeds (Hurba)
a pinch of asefi (hing)
1-2 tomatoes cut fine or preferably
gratesd
tamarind soaked in water
salt to salt
For
veg :-
Potatoes (aloo) cut in 4 pieceseach
Lady finger (bhindi) whole
Drumsticks (Singhe) partly boiled
cut
finger size
Lotus Stem (bhee) if available (boiled
& cut)
Cluster Bean (Gwar) whole
Yam (Suran) if available

Method:
Heat a pot full of water aside in
a dehhchi, Heat oil add hing ginger,
chillies, jeera, hurba and wait till
they crackle Add besan and stir till
light brown or till done Add warm
water and stir and cook till it boils
Add tomatoes and let it boil for another
10-15 minutes.
Add more water if it is thick. Than
slowly keep adding vegetables one-by-one
like Potatoes (aloo),Lotus stem (
bhee), cluster beans (ghwar),Yam (Swran),
Lady finger (bhindi) add later as
it cooks faster When all veg are cooked
well lastly add tamarind and close
the gas serve with rice of aloo tukh
