Hot Tomato Pickle

Ingredients :
600g tomatoes
15 red chillies
1 cup chopped ginger
1 cup chopped garlic
2 cups vinegar
1 tsp turmeric
1 tbsp rai
1 tsp methi
1 1/2 cups oil
Salt to taste


Method :
Cut tomatoes, add turmeric and salt and soak them in 1 cup vinegar. Keep this for 2 hours 15 minutes.

Mix garlic, ginger, red chilies and rai, with a little vinegar.

Fry methi & little rai and add the blended mixture. Fry for 25 minutes.

To this add tomatoes and the remaining vinegar. Stir & bring it to a boil.

When the oil starts floating at the top stop heating & allow it to cool & store.It remains good for 1 year.
