Ingredients
:
For the vadas:
1 cup black Urad dal
1/4 cup green moong dal
Salt to taste
For the Dahi :
4cups dahi
2-4 green chillies, chopped
1/2 tsp grated ginger
6-8 curry leaves
1/4 tsp rai
a pinch of hing
Salt to taste
4 tsp sugar (yogurt should
taste little sweet)

Method:
For vadas:
Soak the two dals for 6-8 hours or overnight.
Grind it to a smooth paste. Add salt to
taste. Heat oil in a pan and add spoonfuls
of dal batter and fry until the vadas are
golden brown. Drop the hot vadas in a bowl
of cold water and leave for about 3-4 minutes.
Take each vada out from water, squeeze the
water out from vadas and set aside.
For making dahi:
Blend curd with little water until it is
smooth. Add sugar, salt, green chillies
and ginger. Make a seasoning with rai and
hing, curry leaves and curd . Keep the curd
in refrigerator until it is chilled.
Serving
the vadas:
Arrange the squeezed vadas in a deep dish.
Pour the curd on the vadas such that all
the vadas are covered well by the curd .
Sprinkle red chili powder, roasted jeera
powder and black salt. Serve with sweet
imli chutney.
