Preparation
time: 40 minutes
Ingredients :
2-3 potatoes, finely chopped
30 gms French beans, finelychopped
30 gms cauliflower, cut into flowerets
2 small sizecarrots, finely sliced
30 gms mushrooms, cut into four pieces
2 medium size capsicum, finely sliced
3diced spring onions
3dry onions, chopped
2 tbps corn flour
Salt to taste
Oil for frying
2-3 red chilies, chopped

Method
:
Take a bowl mix all the vegetables in it,
sprinkle water and add dry corn flour to
it. Keep aside for 18 minutes.
Heat oil in a wide pan till it smokes and
then fry all the vegetables. Remove the
excess oil from the vegetables on a paper.
Taken the same pan heat oil in it and fry
the red chilies, green chilies and spring
onions for a few seconds. Add these to the
fried vegetables and toss to mix. Sprinkle
salt and toss again to mix. Transfer to
a plate, decorate well and serve hot.
